Savory and delicious Steak Curry

At our house, we know this dish as “Steak Curry” but the truth is it’s actually beef and a flavorful, easy, quick weeknight dinner option that also makes great leftovers! We serve it with rice or naan bread or both.

Curries are very popular in Ireland and just about every family I know has their favorite goto recipe. You can buy a nice curry at any local chipper but it’s way more fun to make one at home. The beauty of this curry recipe is that it works with an assortment of tipple options, from wine to beer, perhaps even a gin and tonic!

Ingredients

  • 1 1/2 pounds beef chuck, stewing beef, lean
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Chili flakes, to taste
  • 1/2 cup all-purpose flour
  • 1 tablespoon vegetable oil
  • 3/4 cup boiling water
  • 2 cups white rice (you can substitute for naan bread)
  • 1 tablespoon curry powder, or more, to taste
  • 1 dozen diced carrots
  • 2 bell peppers (the more colors the better)

Steps

  1. Gather the ingredients.
  2. Cut the stew beef into small 1/2-inch cubes. Sprinkle the beef with salt and freshly ground black pepper and then toss with the flour.
  3. Heat the vegetable oil in a heavy skillet over medium-high heat. When the oil is hot, brown the beef, turning to brown all sides.
  4. Add the hot water to the pan and bring to a boil. Reduce heat, cover, and simmer for 2 hours. Check occasionally and add more water if necessary.
  5. Cook the rice following package directions.
  6. Add the curry powder, a pinch of chili flakes, carrots, and bell peppers to the beef and mix well.
  7. Taste and adjust seasonings.
  8. Serve over a bed of rice.
  9. Another popular option at our house is to heat up some naan bread – whatever you feel like.
