If You Like Frozen Pina Coladas

There was a scene from Guardians of the Galaxy where they play the Pina Colada song by Rupert Holmes. Yes it’s a tune which we keep coming back to and for good reason. The Pina Colada cocktail is believed to have originated in 1950’s Puerto Rico but nobody is certain of exactly who is responsible for this wondrous and titillating chilled delight. And while in recent years some have scorned the idea of using a blender to make a frothy frozen drink, we at IrishTipple find it an unbeatable and timelessly sophisticated.

One caveat, you must use a light rum and cream of coconut for this cocktail. There are many rum options so be sure to find a light one at your local store. The cream of coconut is sweet and thick which folds perfectly into a Pina Colada. So break out your smoothie blender, pineapple and an unaged light rum and get ready to create something you and your friends can enjoy and have conversations about…possibly even sing its praises.

Ingredients
• 2 ounces of Bacardi (a light rum works best)
• 1 1/2 ounces cream of coconut (don’t use coconut milk)
• 1 ounce pineapple juice
• 1/2 ounce of squeezed lime juice
• 1 cup frozen pineapple chunks
• 1 cup of ice
• 1 pineapple wedge for garnish
• 1 Maraschino cherry for garnish

Steps
Puree in blender until very smooth, give it about 20–30 seconds. 



Pour into a hurricane glass, and garnish with pineapple wedge, maraschino cherry, possibly a pineapple leaf or cocktail umbrella.

Top tip! You can place the pineapple chunks in the freezer for an hour for the optimal Pina Colada. 

When ready to serve, combine all ingredients (except of course the garnish) in a blender, making sure to shake the cream of coconut as it’s very thick before adding.
